Popsicles could be my favorite treat, they are generally easy to make and very adaptable. Usually I am able to make with what I already have in the fridge. They make the perfect warm day treat for everyone to enjoy and cool off a little. They also bring a bit of nostalgic memories to summer days at grandma’s house sitting on the porch dripping in popsicle juice. I’ve gathered some really fun, easy and scrumptious recipes for you and your kids to try on your next warm day, even one for just adults.
Easy Breakfast Yogurt Pops –
A little breakfast popsicle to get your morning started. Surprise your kids with a little treat to start the day off.
– Mix together the milk, yogurt and 1 tsp. of the honey.
– Place a few berries into the bottom of each mold.
– Divide the yogurt mixture between your popsicle molds.
– Add another layer of berries and top off molds with the remaining yogurt
– Place a wooden ice cream stick into each mold and top the yogurt with a little granola
– Place the popsicles into the freezer for at least 5 hours before consuming.
Creamy Lemon Raspberry Pops –
These pops were a real hit at our house with both kids and adults! Sweet, tart and creamy all in one for something a little different than your usual fruit juice pop. Made with fresh squeezed lemons and mashed berries there’s nothing but wholesome goodness in these pops.
– Place the fresh raspberries in a fine mesh strainer. Add the granulated sugar into the raspberry puree. Stir to combine. Set aside. After about 5 minuets press the raspberries with a spatula and continue to work it until all of the juice is in the bowl and only the seeds and some skin is left in the strainer. Discard seeds.
– In a mixing bowl, add in the yogurt, lemon juice, and lemon zest. Stir to incorporate.
– Scoop the yogurt into four popsicle mold cavities. Try to keep it even.
– Put the raspberry puree into a cup with a spout or spoon it into the molds to the top.
– Using skewer, poke the raspberry puree down into the yogurt mixture until it’s mixed to your liking. Avoid stirring to get the swirled effect like mine.
– Place the popsicle sticks or tops in. Freeze overnight until set.
Coconut Blueberry Cream Pops
These pops were probably the simplest to make using just four ingredients and a smoothie blender. You can even substitute the blueberries for any fruit or berry to mix it up. I found these make a great alternative too to the store bought yogurt tubes if you’ve run out.
– Mix the coconut milk, honey and vanilla in a blender until smooth.
– Add the blueberries and pulse until they’ve’ been “smashed” but not completely blended.
– Pour the mixture into popsicle molds and freeze for at least 5 hours.
Peanut Butter Banana Pops –
Another crazy simple and unique popsicle that takes less than 10 minuets to whip up. After they have been frozen the dipping and topping options are pretty endless. We went simple and just did chocolate, but you can add peanuts, sprinkles, pretzel bits, sea salt etc. etc.
– In a in a blender blend together the yogurt, peanut butter, banana, milk, vanilla extract and sugar.
– Divide the mixture into popsicle molds and insert popsicle sticks. Freeze the pops until frozen solid, at least 4 hours.
– When ready to serve, remove the pops from the freezer and release them from the molds.
– Dip or drizzle them with the chocolate sauce. Serve immediately.
Pomegranate Champagne Pops – Adults only!
Here is a great pop to end those endless summer days or a fun backyard party treat. A little something for the adults to enjoy too on those warm nights when the kids are finally in bed and tucked away.
– Combine 1 cup of fresh pomegranate juice and 2 tablespoons of sugar, then whisk until sugar is completely dissolved. Divide the pomegranate syrup amongst the Dixie cups and add your popsicle sticks; freeze it for 2 hours.
– Combine the juice of 1 lime, the remaining sugar, and a splash of the champagne. Whisk the mixture together so that all of the sugar is dissolved. Now add enough champagne to measure out 1.5 cups. Give it a gentle stir to combine with the lime syrup.
– Slice remaining lime into thin disks and seed the pomegranate.
– Remove the popsicle mold from the freezer and fill each individual mold with a few some pomegranate arils. Now top off the molds with the champagne mixture and lime on top and place them back in the freezer.
– Let the popsicles freeze for about 10 hours before serving.
